We are so excited to share this recipe because our teenage years were filled with making chocolate mug cakes while binge watching our favorite tv shows.

A chocolate mug cake was the first recipe I ever memorized! Cooking without following a recipe is second nature now, but, as a teenager, it felt like such an accomplishment to be able to make something so delicious and addictive without following a recipe.

There is something so magical about combining chocolate with peanut butter, this mug cake is going to be everyone’s new go-to after dinner dessert! Most nights when I crave dessert, I don’t want to spend an hour making a full cake just for me to eat a piece of it to satisfy my sweet tooth. This Brownie Mug Cake with Peanut Butter Filling takes less than two minutes to make and is the perfect size for one person!

Brownie Mug Cake with Peanut Butter Filling

Vegan

 

Yield: 1 mug cake

Prep time: 1 minute

Bake time: 50 seconds

Ingredients


· 1 tbsp flour

· 2 tbsp cocoa powder

· 2 tbsp sugar

· 2 tbsp oil

· 2 tbsp water

· 1 ½ tbsp peanut butter

· ½ tbsp powdered sugar

· Optional: ½ tbsp vegan chocolate chips


 

Method


  1. In a small bowl, mix powdered sugar and peanut butter until smooth. Set aside.

  2. In a microwave safe mug, mix flour, cocoa powder, and sugar together with a fork or small whisk.

  3. Add oil and water to mug and continue to mix until smooth.

  4. Scoop peanut butter mixture into the center of the mug cake batter. Top mug cake with optional chocolate chips and microwave for approximately 50 seconds.*

  5. Remove mug cake from microwave and top with a scoop of vegan vanilla ice cream, then serve!


 

Notes:

*Cook times vary depending on your microwave. The mug cake is done when it has set on the top and the chocolate chips are slightly melted.
