Cinnamon Sugar Mini Muffins

Coated in cinnamon sugar, these moist vanilla mini muffins are nostalgic, addictive, and so easy to make! The perfect copy-cat for cinnamon sugar donuts without the fuss of deep frying.
These Cinnamon Sugar Mini Muffins will simultaneously make you feel like you are at a carnival eating the most delicious treats and that you are at a fancy tea party devouring mini adorable food!
Currently, as I write this week's blog entry, I am munching on these addictive Cinnamon Sugar Mini Muffins. When I say addictive, I really mean it! When Taylor first made these muffins and we took pictures of them, it took all of my will power not to eat them in between shots.
However, I kept reminding myself that our adorable mountain of mini muffins would not be a mountain if I was snacking the whole time! I think you would all be able to tell in our pictures if those sweet mini muffins were slowly disappearing. As soon as we knew we were happy with how our photos turned out, we raced to eat some!
What I love about this recipe is the simplicity of the ingredients and the quickness of putting it all together. However, these Cinnamon Sugar Mini Muffins appear difficult to bake for anyone you are wanting to impress and they are so delicious that it seems like the recipe should have a million ingredients! Cinnamon Sugar Mini Muffins
Vegan
Yield: 18 mini muffins
Prep time: 10 minutes
Bake time: 9-12 minutes

Ingredients
Dry Ingredients
· 1 cup all-purpose flour
· 1 tsp baking powder
· ½ tsp baking soda
· a pinch of salt
Wet Ingredients
· ½ cup non-dairy milk + ½ tbsp vinegar · ½ cup granulated sugar · 1 tsp vanilla · ⅓ cup vegetable oil (or any other neutral tasting oil)
Cinnamon Sugar Topping
· 2 tbsp vegan butter, melted
· ½ cup granulated sugar
· 2 tsp cinnamon
Method
Preheat your oven to 400°F and spray your mini muffin tins with cooking spray.
Measure the vegan milk, add the vinegar, and stir to make sour milk.
In a medium bowl, combine all the dry ingredients and stir these ingredients together.
In a large bowl, combine all the wet ingredients and whisk together.
Add the dry ingredients to the wet ingredients and whisk until combined.
Spoon the batter into the prepared mini muffin tins and bake the mini muffins for approximately 9-12 minutes or until a tester pick is removed clean from their centers.
Remove from oven and let cool for a minute.
In a small bowl, combine the sugar and cinnamon for the topping.
As you remove each mini muffin from the tin, dip the tops of the mini muffins into the melted butter and then roll the whole mini muffin into the cinnamon sugar mixture. Place on a cooling rack to cool completely and continue this until all of the mini muffins are coated in cinnamon sugar.
