Crispy Artichoke Hearts with Vegan Garlic Mayonnaise

Crispy Artichoke Hearts with Vegan Garlic Mayonnaise

I gained inspiration for this recipe when I was out for dinner at a beautiful, small Italian restaurant next to the beach. My boyfriend ordered the table some appetizers including fried artichoke hearts. As this appetizer was not vegan, I simply stared at his face in anticipation while he tried his first bite. He loved them and instantly I knew I had to veganize and recreate the concept.

Of course, deep frying anything is a big ordeal and so I created this recipe to be both oven and air fryer friendly! I prefer the air fried version as they are a bit moister inside, but both are delicious! These are great to serve while entertaining as these Crispy Artichoke Hearts with Vegan Garlic Mayonnaise are the perfect finger food and a unique bite for your guests to enjoy.

Tessa and I always make these when we are hosting a movie or game night together. They are fun to eat, go great with tequila (of course, we always pair this with our Grapefruit & Sage Tequila Sodas), and are a crowd pleaser.

Process:


I start by measuring out the artichoke hearts and placing them on a large plate. I sprinkle them with salt and pepper and set them aside.


I set up my breading station by measuring the chickpea flour in a small bowl, measuring the breadcrumbs on a small plate, and mixing the nutritional yeast, vegan mayonnaise, and warm water in a separate small bowl. I set two plates next to my breading station.

I begin to bread my artichokes by lightly tossing them in the chickpea flour with my right hand. Then immediately after tossing the artichoke hearts in chickpea flour, I use my left hand to dunk the artichoke hearts in the mayonnaise mixture. I then set these artichoke hearts aside on one of the plates. Once all the artichoke hearts have been coated in chickpea flour and then dipped in the mayonnaise mixture, I wash my hands and can begin the breadcrumb coating.

To coat the artichoke hearts in breadcrumbs I use my right hand to pick them up and place them in the breadcrumbs and I use my left hand to cover the artichoke hearts in the breadcrumbs. I then place the breaded artichoke hearts on the other clean plate until I have finished breading all of them.

I now cook the artichoke hearts depending on my preferred method (air fryer or oven) and make the garlic mayonnaise by mixing all its ingredients in a small bowl.

Crispy Artichoke Hearts with Vegan Garlic Mayonnaise

Vegan

 

Serves: 2-4 people

Prep time: 40 minutes

Ingredients

Crispy Artichoke Hearts

· 2 cups marinated, quartered artichoke hearts

· ½ tsp salt

· ¼ tsp black pepper

· ⅓ cup vegan mayonnaise

· ⅓ cup warm water

· 2 tbsp nutritional yeast

· ⅓ cup chickpea flour*

· 1 ½ cup panko style breadcrumbs


Garlic Mayonnaise

· ½ cup vegan mayonnaise

· ¼ tsp granulated sugar

· 1 tbsp pureed garlic

· A pinch of salt


 

Method


  1. Drain artichoke hearts. Place artichoke hearts on large plate and sprinkle them with the salt and pepper.

  2. Pour chickpea flour in a small bowl.

  3. In a different small bowl, whisk together vegan mayonnaise, nutritional yeast, and warm water until smooth.

  4. On a medium plate, pour breadcrumbs.

  5. To bread artichokes, use your left hand to lightly toss an artichoke piece in chickpea flour (shake off any excess flour from the artichoke heart). With your right hand, dunk the chickpea flour coated artichoke heart in the mayonnaise mixture so that the artichoke heart is covered, allowing any excess mayonnaise to drip off. Set artichoke heart aside on a clean plate until this step has been repeated for each artichoke piece.

  6. With clean hands, finish the breading by coating each artichoke heart piece with breadcrumbs and set aside.


Air Fryer Method


  1. Preheat oven to Warm setting (200°F) and line a large baking sheet with parchment paper. Set aside.

  2. Set air fryer to 350°F and allow to preheat for 5 minutes.

  3. Place some of the battered artichoke hearts in air fryer (you will have to cook the artichokes hearts in batches) and cook for 10 minutes.

  4. Gently flip artichoke hearts and continue to cook for 5 more minutes or until artichoke hearts are golden brown and crispy. Remove from air fryer, place on prepared baking sheet, and into the oven while you continue to cook the remaining artichokes.

  5. Once all the artichokes are cooked, prepare the garlic mayonnaise by mixing all its ingredients together in a small bowl. Serve crispy artichoke hearts with garlic mayonnaise and enjoy!

Oven Method


  1. Preheat oven to 400°F and line a large baking sheet with parchment paper.

  2. Line battered artichoke hearts on baking sheet and place in the oven for 30 minutes.

  3. After 30 minutes, flip artichokes and allow to bake for another 15 minutes or until the artichoke hearts are crispy and golden brown.

  4. Once artichoke hearts are cooked, prepare the garlic mayonnaise by mixing all its ingredients together in a small bowl. Serve crispy artichoke hearts with garlic mayonnaise and enjoy!
