Crispy Pickles with Creamy Horseradish Dipping Sauce

Updated: Oct 30, 2020

Have your favorite pub appetizer at home! These vegan Crispy Pickles with Creamy Horseradish Dipping Sauce are crispy, savory, zesty, and the perfect accompaniment to a cozy night in.

One of my favourite things to do with friends is go bowling! I am absolutely terrible at bowling, but it is a classic Saturday night out for us! I usually walk away as soon as I throw the ball because more than likely it will be a gutter ball. Despite my terrible bowling skills, I still love to go to the bowling alley because the atmosphere is so fun, the food and drinks are incredible, and we end up just sitting in our lane laughing for hours as we throw gutter balls all night!

The only problem I really have when going bowling is that my friends and partner are obsessed with ordering fried pickles and they are never vegan no matter where we go! It has been years since I have been able to actually eat fried pickles. So, I am really excited to have a fried pickle recipe that I can make for my friends that we can eat while having a few drinks before going bowling. Hmm...maybe these few drinks before hand are the reason I throw so many gutter balls???

Process:

I start by measuring out the pickles and placing them on a large plate. I sprinkle them with pepper and set them aside.

I set up my breading station by measuring the chickpea flour in a small bowl, measuring the breadcrumbs on a small plate, and mixing the mayonnaise and warm water in a separate small bowl. I set two plates next to my breading station.

I begin to bread my pickles by lightly tossing them in the chickpea flour with my right hand. Then immediately after tossing the pickles in chickpea flour, I use my left hand to dunk the pickles in the mayonnaise mixture. I then set these pickles aside on one of the plates. Once all the dill pickle chips have been coated in chickpea flour and then dipped in the mayonnaise mixture, I wash my hands and can begin the breadcrumb coating.

To coat the pickles in breadcrumbs I use my right hand to pick them up and place them in the breadcrumbs and I use my left hand to cover the pickles in the breadcrumbs. I then place the breaded pickles on the other clean plate until I have finished breading all of them.

I now cook the dill pickle chips depending on my preferred method (air fryer or oven) and make the creamy horseradish dipping sauce by mixing all its ingredients in a small bowl. I serve these Crispy Pickles with Creamy Horseradish Dipping Sauce as an appetizer or a snack.

· ½ cup vegan mayonnaise

· ¼ tsp granulated sugar

· 1 tbsp horseradish

Method

  1. Place pickles on large plate and sprinkle them with pepper.

  2. Pour chickpea flour in a small bowl.

  3. In a different small bowl, whisk together vegan mayonnaise, salt, and warm water until smooth.

  4. On a medium plate, pour breadcrumbs.

  5. To bread pickles, use your left hand to lightly toss a dill pickle chip in chickpea flour (shake off any excess flour from the pickle). With your right hand, dunk the chickpea flour coated pickle in the mayonnaise mixture so that the dill pickle chip is covered, allowing any excess mayonnaise to drip off. 3. Place some of the battered pickles in air fryer (you will have to cook the pickles in batches depending on the size of your air fryer), spray pickles with cooking spray, and cook for 10 minutes.

  4. Gently flip pickles and continue to cook for 5 more minutes or until the pickles are golden brown and crispy. Remove from air fryer, place on prepared baking sheet, and into the oven while you continue to cook the remaining pickles.

  5. Once all the pickles are cooked, prepare the horseradish dipping sauce by mixing all its ingredients together in a small bowl. Serve crispy pickles with horseradish dipping sauce and enjoy!

Oven Method

  1. Preheat oven to 400°F and line a large baking sheet with parchment paper.

  2. Line battered pickles on baking sheet and place in the oven for 30 minutes.

  3. After 30 minutes, flip pickles and allow to bake for another 15 minutes or until the pickles are crispy and golden brown.

  4. Once pickles are cooked, prepare the horseradish dipping sauce by mixing all its ingredients together in a small bowl. Serve crispy pickles with the horseradish dipping sauce and enjoy!
