The perfect vegan cupcake recipe for this Halloween: an orange and black funfetti batter, delicious cream cheese frosting, and a surprise grape jelly filling!
Halloween season is upon us, which means prepping all the adorable or scary treats for this weekend! There are certain holidays which some people may think are just for kids, but I believe that even as an adult you can have all the same excitement and be silly during Halloween!
These cupcakes are the perfect thing to make with your kiddos, because they can help with all the stirring, measuring, and most importantly decorating! However, you could also have so much fun making these with a best friend or partner while a spooky movie is playing in the background and sipping a fun fall cocktail! When Tay and I were working on these cupcakes we had an absolute blast with all their fun eyeball looks! We would love to see any of your recreations of what kind of sprinkles you use to make the little monsters too! However, these cupcakes would still be the most perfect Halloween treat if all you had on hand were some black sprinkles or anything slightly resembling Halloween colours. Halloween is all about having fun and there is nothing more fun than being creative with cupcake decorations!
These Monster Mash Cupcakes are the best thing to bring to a Halloween get together this year! Whenever a cupcake has any type of jelly filling, it feels like it was bought from a super fancy bakery! They make me feel like such a talented baker, when really it is way easier than I expected to fill cupcakes! So, these cupcakes and our New York Cheesecake Cupcakes are always such a crowd pleaser!
However, if you aren't going to any festive parties, depending on the rules where you are living or just because you would rather stay in pjs all weekend (trust us, we get it), then these are still such a yummy dessert to munch on by yourself in between trick or treaters knocking on your door! That is exactly what we will be doing this Halloween!

Monster Mash Cupcakes

Ingredients
Dry Ingredients
· 2 cups all-purpose flour
· 2 tsp baking powder
· ½ tsp baking soda
· ¼ tsp salt
· ¼ cup Halloween sprinkles
Wet Ingredients
· 1 cup vegan milk (I use unsweetened soy milk) + 1 tbsp vinegar
· 1 cup granulated sugar
· 1 tsp vanilla
· ¾ cup vegetable oil (or any other neutral tasting oil)
· ¾ cup grape jelly
· 1 batch of Vegan Cream Cheese Frosting + optional vegan food coloring
· Halloween sprinkles to top cupcakes
Method
Preheat oven to 350°F. Line cupcake tin with cupcake liners.
Measure the vegan milk, add vinegar, and stir to make sour milk.
In a medium bowl, combine all the dry ingredients and stir these ingredients together.
In a large bowl, combine all the wet ingredients and whisk together.
Add the dry ingredients to the wet ingredients and whisk until combined. Do not overmix or the color of the sprinkles will bleed.
Pour the batter into the prepared tin and bake for approximately 20 minutes or until a tester pick is removed clean from the center.
Immediately after removing from the oven, place the cupcakes, while still in their cupcake tin, on a cooling rack.
Once cupcakes have cooled (approximately 10 minutes), remove cupcakes from their tin and place cupcakes on cooling rack to cool completely.
With either a cupcake corer or a small knife, core the center of the cupcakes, setting the extra cake to the side. Fill each cupcake with grape jelly and seal with a piece of the extra cake.
Make 1 batch of Vegan Cream Cheese Frosting (click the link for the directions) and pipe frosting onto cupcakes.
Top cupcakes with more sprinkles and serve.
