Pumpkin Spice Sugar Cookies with Vegan Cream Cheese Frosting

These Pumpkin Spice Sugar Cookies have a delicious outer crunch with a soft middle and the creamy, tangy, Vegan Cream Cheese Frosting is the perfect pairing to the pumpkin spice flavor.
There is nothing that feels more like fall than pumpkin spice everything! However, for some crazy reason so many pumpkin spice flavored things aren't vegan! So we decided to use our new favorite frosting, the Vegan Cream Cheese Frosting and create a perfect vegan pumpkin spice cookie!
These Pumpkin Spice Sugar Cookies with Vegan Cream Cheese Frosting are the perfect addition to a rainy fall day. Get a plate of cookies, a cup of tea, and curl up on the couch to watch a cheesy fall movie or read a beloved novel. You get extra fall points if you can be bundled in flannel blankets next to a cozy fire!
As soon as this time of year starts I find myself becoming extremely sentimental. Thinking of fall activities and days spent with my family as a child. This feeling lasts well into winter when Christmas arrives.
Sugar cookies are a reflection into our childhood where our mom is baking cookies while we play with our sisters or do homework at the kitchen table or sneak cookie dough to eat.
One of the best smells in the world is when we would come home from school and immediately going in the house we got a whiff of freshly baked cookies out of the oven.

Process:
I start by preheating my oven to 325°F and I line a baking sheet with parchment paper. I combine the flour, sugar, cornstarch and pumpkin spice into a large bowl and whisk it together.
If you don't have any pumpkin spice seasoning, combine ground ginger, ground cinnamon, ground cloves, and ground allspice, ¼ tsp of each instead!
Then I measure out my vegan butter and pumpkin puree and add it to my flour mixture by breaking it into chunks. I then blend the butter and pumpkin into the flour with either a pastry cutter or my fingers. until a dough is formed.
If using your fingers, press the butter into the flour by rubbing the mixtures together in between your finger tips. You are aiming for an even distribution of butter.
Once a dough is formed, I place it in between two large sheets of parchment paper. I then roll the dough with a rolling pin. I roll the dough until it is even and approximately 1/4 of an inch in thickness.
I cut the cookie into shapes with cookie cutters or a cup and place the cookies onto my prepared baking sheet. These cookies bake for approximately 12 minutes or until they are brown on the bottom.
Once removed from the oven, I allow them to cool on the baking sheet for 2 minutes and then cool completely on a wire rack.
I then make the Vegan Cream Cheese Frosting and spread it on each cookie. I top the cookies with a sprinkle of cinnamon and serve!

Ingredients
· 2 cups all-purpose flour
· ¾ cup granulated sugar
· ¼ cup cornstarch
· 1 tsp pumpkin spice seasoning*
· 1 cup vegan butter
· ½ cup pumpkin puree
· 1 batch of our Vegan Cream Cheese Frosting
Method
Preheat oven to 325°F and line a large baking sheet with parchment paper
In a large bowl, combine flour, sugar, cornstarch, and pumpkin spice seasoning.
Add butter and pumpkin puree in large chunks and blend with a pastry cutter, a fork, or your fingers until a dough is formed.
Place dough between two pieces of parchment paper and, with a rolling pin, roll dough until it is approximately ¼ of an inch thick.
Cut out cookies from dough with either cookie cutters or a cup. Place cookies on your prepared baking sheet and bake for approximately 12 minutes. Remove cookies from oven once the cookies are set and lightly browned on the bottom.
After removing them from the oven, allow the cookies to cool for 2 minutes while on the cookie sheet. Then, transfer cookies onto a wire rack to cool completely.
Once cookies have cooled, make one batch of Vegan Cream Cheese Frosting. Spread frosting on cooled cookies and sprinkle cookies with ground cinnamon. Eat and enjoy!
