Spice Cake with Vegan Cream Cheese Frosting

With the perfect balance of spices and the most delicious cream cheese frosting (I could eat it straight out of the bowl), no one will guess that this dessert is vegan... or so easy!
We are continuing our releases of the most cozy fall desserts that will make your home smell incredible and convince you that this rainy weather is precisely what you want. So stay inside and bake all day like us! This cake is exactly what you should be making for any fall birthday or just a Saturday night when you are wanting some fluffy, spiced, perfection after dinner.
This cake is inspired by our mom who like me doesn't have a huge sweet tooth, but loves a spiced cake. I know! It is crazy that I don't have a huge sweet tooth when we release such amazing desserts. But I give that creative dessert credit all to Taylor.
I am definitely the savory obsessed sister! However, having this blog has made me really start to enjoy having dessert more. Especially since I almost always have some delicious cookies or cake at home with all of our fun recipe testing!
After dinner I used to crave a bowl of popcorn, but now I have added sweets as well. My life is changed in the best way possible! The other day after dinner I made popcorn and had the remainder of my recent batch of Pumpkin Spice Sugar Cookies and I was in complete bliss!
This cake is the perfect balance of sweet and spiced, that you will constantly be going back for another piece. Our Vegan Cream Cheese Frosting is fluffy and tangy, which pairs incredibly with this cake.
The only part of this cake that is not for our mom is the walnuts on top! For some crazy reason our mom does not like walnuts, however, we love the crunch and nuttiness that it brings to the cake. If you have an aversion to walnuts like our mom does you can definitely use another topping that you prefer, such as, almonds, or raisins, or just eat the Spice Cake with Vegan Cream Cheese Frosting on its own too! If you decide to use almonds and you have some extra, then you can make our Triple Berry Cake which we always sprinkle with almonds at the end!

Spice Cake with Vegan Cream Cheese Frosting

Ingredients
Dry Ingredients
· 2 cups all-purpose flour
· 2 tsp baking powder
· ½ tsp baking soda
· ¼ tsp salt
· ¼ tsp allspice
· ¼ tsp cinnamon
· ¼ tsp ginger
· ¼ tsp ground cloves
Wet Ingredients
· 1 cup vegan milk (I use unsweetened soy milk) + 1 tbsp vinegar
· 1 cup granulated sugar
· 1 tsp vanilla
· ¾ cup vegetable oil (or any other neutral tasting oil)
· 1 batch of Vegan Cream Cheese Frosting
Method
Preheat your oven to 350°F and line a 9" x 9" cake pan with parchment paper. Spray lightly with cooking spray.
Measure the vegan milk, add the vinegar, and stir to make sour milk.
In a medium bowl, combine all the dry ingredients and stir these ingredients together.
In a large bowl, combine all the wet ingredients and whisk together.
Add the dry ingredients to the wet ingredients and whisk until combined.
Pour the cake batter into the prepared pan and bake the cake for approximately 35 - 40 minutes or until a tester pick is removed clean from the center.
Once baked, remove cake from oven and set on a cooling rack. After cooling for approximately 30 minutes (or until cake is only slightly warm and firm to the touch) remove cake from pan by lifting the cake out using the parchment paper. Allow cake to cool further.
Once the cake is no longer warm, prepare the Vegan Cream Cheese Frosting and frost cake. Top with nuts to your preference (we used walnuts)!
