Trail Mix Breakfast Cookies
These easy, filling, and nutritious vegan cookies are perfect to bring on a family camping trip and easy to pop in your backpack before heading on a hike!
I am so excited about these Trail Mix Breakfast Cookies! I have mentioned in previous posts that my fiancé, Devin and I are very outdoorsy people. So naturally trail mix is a go-to snack for camping trips or hikes. However, we both get pretty bored of eating handfuls of nuts every weekend we go away. So, these cookies are the perfect adventure day snack! They taste incredibly delicious, but are packed with healthy protein that keeps you fueled for the day.
There are so many essential nutrients found in these cookies to keep you healthy and energized while spending some time in nature. But when you are eating these they don't taste like cardboard energy bars or bland nuts, these taste like you are eating dessert!
When we released our Easy Vegan Breakfast Cookies I raved about how these cookies helped me feel full through my work day until a proper lunch time: these Trail Mix Breakfast Cookies have the same amazing benefit! You do not need to be an outdoorsy person to enjoy these cookies, because they are perfect for quick breakfast for on the go! Make one or both of these yummy breakfast cookies on the weekend and you won't have to worry about making breakfast on those busy weekday mornings!
Looking for other tasty baked goods to make for your camping weekend? These are some recipes that I have made the day before Devin and I leave for a trip, that are absolutely perfect for long drives or nights sitting by a campfire.
