Vegan Chocolate Chip Cookies

I don't think I have ever met someone who doesn't love a chocolate chip cookie. Even those crazy people who aren't necessarily chocolate obsessed (*cough cough* me...I know, I'm sorry!!!), find comfort and happiness within a chocolate chip cookie.
Taylor and I spent a lot of time debating what makes the perfect chocolate chip cookie. The main aspects that needed to be present were the gooey center, while still keeping a nice crunch on the outside, and having them stay soft after a couple days of sitting in their cookie jar. Let me tell you, this was not always easy! Out of all of our recipes we have created, these probably took the most tries and tweaks to make them perfect. But trust me when I say these are the PERFECT Vegan Chocolate Chip Cookies!

Cookies are one of the best things to have in the house at all times! As many of us can relate from our childhood or every single 90's family themed show, coming home from school to have some milk and cookies is so comforting. Now, you can make these Vegan Chocolate Chip Cookies and have a batch ready for when you come home from work and want to feel that same calming affect.

Vegan Chocolate Chip Cookies
Yield: approximately 20 medium sized cookies
Prep time: 5 minutes
Bake time: approximately 8-9 minutes

Ingredients
½ cup brown sugar
½ cup granulated sugar
1 cup vegan butter, softened
2 tbsp non-dairy milk
1 tsp vanilla
2 cups flour
2 tsp baking soda
a pinch of salt
1 cup vegan chocolate chips
Method
Preheat oven to 375°F and line a large baking sheet with parchment paper. Set baking sheet aside.
In a large bowl combine brown sugar, granulated sugar, vegan butter, non-dairy milk, and vanilla. Cream together with either a hand mixer or a whisk.
Add flour, baking soda, and salt to the butter mixture and combine with a wooden spoon or stiff spatula. If the batter is crumbly and does not hold together, add 1-2 additional tablespoons of non-dairy milk.
Fold in the vegan chocolate chips.
Spoon cookie dough onto prepared sheet, leaving approximately an inch between each ball of dough. Bake for approximately 8-9 minutes or until the cookies are slightly browned on the bottom. For a soft, chewy cookie, do not overbake.*
Once baked, remove from oven, allow to cool on the sheet for one minute, then transfer the cookies to a wire cooling rack. Repeat this process until you have baked all of the cookies. Eat and enjoy!
Note:
* These cookies puff up slightly while they bake, but as they cool they will deflate.
